Meatloaf is a terribly individual thing. I don’t like other people’s meatloaf.
Other people’s meatloaf has things in it. My meatloaf is good. So when I inivited Steve over for dinner a few years ago and told him I was making Mamma Mormoni’s Meatloaf - I was not prepared to have him retreat in distaste. He didn’t trust my meatloaf. It might have things in it. This is a deeply meaningful statement on Life.
The outcome, however, is that Steve did come over for dinner, did eat my meatloaf, and found it tasty. I think that means he’s my brother. (See Egg Potato for further information.)
INGREDIENTS:
2-3 pounds of lean ground beef
salt and pepper
2 eggs
1/2 cup oatmeal (or bread crumbs, or cracker crumbs)
two or three shakes of Worchestershire sauce
a big glop of A-1 sauce (maybe two tablespoons)
garlic powder
onion powder
PROCEDURE:
li>First, check to see if you have ketchup in the fridge. If you do not then either send someone to the store for ketchup, or make something else for dinner.
- Put the hamburger (completely thawed) in a large bowl and break in the eggs.
- Add the oatmeal (or crumbs), the Worchester and A-1, and salt, pepper, garlic and onion powder in the proportions you usually use.
- Mix all this together with your hands until it is homogenous. (If the hamburger is still partly frozen, your hands will be, too.)
- Shape the lump into rectangular loaf shape about the width of a slice of bread (so that you can cut the finished product into thin slices for sandwiches), and put it in a greased 9"x13" pan. Now I don’t mean you should fill the pan with the meat mixture, just form your loaf and lay it on the pan, not touching the edges anywhere.
- Cook at 375o for an hour - or a little more. The top will just begin to look crusty and the center should be completely done, not pink.
- Remove from oven and let sit on the counter for 5-10 minutes then transfer to a serving platter.
- When you slice this for people at the table be just a little stingy - you want to be sure there’s enough left over to slice for sandwiches at lunch the next day. Cold meatloaf sandwiches (made with mayonaise and ketchup) are the REAL reason to make meatloaf.
